Ingredients

4 large red peppers.
2 tablespoons chopped basil.
140 gr. Of brown rice.
1 clove garlic, minced.
1 large chopped onion.

2 tomatoes, peeled and chopped.
1 tablespoon lemon juice.
Salt and pepper to taste.
2 tablespoons olive oil.
1 tablespoon lemon juice.
Aluminum foil.
Sprigs of fresh basil
Lemon wedges.
preparation

Cook brown rice. Once ready, pass through cold water and drain and reserve.
Remove the corns from the peppers, extract the seeds, the internal white membranes and scald the peppers in boiling water for 2 minutes. Remove and drain.
Put a spoonful of oil in a pan, fry the garlic and onion until they are transparent.
Remove and add walnuts, tomatoes and lemon juice.
Cook over low heat for 5 more minutes.
Remove the pan from the heat and add the chopped basil, salt and pepper.
Finally blend with brown rice.
The only thing left is to fill the peppers with this mixture and place them in a baking dish.
Sprinkle with remaining oil spoon and cover with foil.
Bake at medium temperature for 40 minutes.
Once ready it is served in dishes decorated with basil sprigs and lemon wedges.
